Grapes variety:

Sauvignon.

Cultivation system, “a Cappuccina”, or arched cane; 10-year-old vineyard.

Grape-harvest period:

First days of September, through a grape-harvest in crates.

Winemaking process:

It is carried out with a soft destemming/crushing process, defecation through enzymes and cryomaceration

at controlled temperature of 10-15°C for 12-15 hours.

Aging/Refining:

Fermentation in stainless steel containers at law temperature. A two-month refining process in bottle.

Malolactic fermentation not carried out.

Colour:

Lightly deep straw yellow.

Aroma:

Its bouquet reminds of yellow flowers, sage and pepper.

Taste:

Dry, round and pure taste wine, with fruity mouthfeel.

Alcoholic content:

12%.

Serving temperature:

8-10 °C.

Food suggestions:

This wine is perfect for appetisers; it also matches perfectly with first courses, creams, soups and light

cheeses.
